MAKING FOOD SAFER — PEF members at the state Department of Correctional Services earn certification by the National Restaurant Association Education Foundation to be “servesafe” food protection managers. The course is designed to reduce and prevent food-borne illness. They will be teaching inmates involved with food preparation safer methods in preparing and storing food. Inmates, in turn, may also earn certification, which could lead to gainful employment after their release. The food supervisors pictured are (L-R standing) Wayne Rabideau (Altona), Eric Schwebke (Coxsackie), John D’Eredita (Downstate), Wai Jung (Eastern). (L-R seated) Tina Bell (Watertown), Lynn McLeod (Collins), Seth Tucker (Woodbourne) and Larry Vellucci (Great Meadow). They were presented with their certificates April 28 in Albany. — Photo by John Epting
